Step-by-Step Preparation
1. Knead the Dough
In a bowl, mix wheat flour, ajwain, salt, and ghee. Add water gradually to knead a firm, smooth dough. Cover and rest for 20 minutes.
2. Prepare the Tangy Sattu Filling
Mix sattu with chopped ginger, garlic, green chillies, coriander, ajwain, kalonji, mustard oil, lemon juice, salt, and a spoonful of pickle masala. Rub the mixture between your palms; it should hold together slightly when pressed.
3. Stuff and Shape the Littis
Divide the dough into lemon-sized balls. Flatten the edges to form a cup shape, fill generously with sattu filling, seal the top, and roll smoothly between your palms.
